Thanksgiving

This was Zane at Thanksgiving last year on the left. How tiny! Only 3 months old! Zane this year is on the right. How time has flown. 





 Our Thanksgiving this year was spent at home with Jack's mom and our friend Mike. The food and company was good. We did not make it up to Pennsylvania this year because we both had to work the day before and after the holiday. Pretty crappy, but oh well, not much we can do. 

Zane didn't really care for turkey, but ate mashed potatoes, sweet potatoes and corn. Maybe next year we can convince him to eat a little more :-)

4 Years

Pumpkin Pie crossiants

I love Pinterest. I have found some great recipes on there. I hosted book club this past week and was looking for some fall recipes. I made a nice warm crockpot chicken salsa. For dessert I wanted something with pumpkin. I cruised around on Pinterest. I discovered pumpkin pie croissants.

THEY.WERE.AMAZING.

And super easy too!

Recipe:
Oven to 375 degrees

I made a lot of the filling, so you can cut the recipe in 1/2. I used it for both a pumpkin pie dip and I made 16 croissants. I looked at the ingredients and then made my own concoction. It was yummy.

Ingredients:

  • 1 can pumpkin
    2 cups powdered sugar
    1 package cream cheese
    Dash of vanilla extract
    1 tsp cinnamon
    Dash of ginger
    Dash of cloves
    Dash of nutmeg 
  • Sugar & Spice
  • 4 tablespoons sugar
  • 1 tablespoon pumpkin pie
Instructions
  1. Unroll each crescent roll.
  2. Beat together the cream cheese, canned pumpkin, vanilla and spices together.
  3. Spread about 1 - 1 1/2 teaspoons of filling over each crescent roll.
  4. Roll up, starting with the wider end.
  5. Stir together the additional sugar and pumpkin pie spice.
  6. Roll each pumpkin pie croissant in the sugar/spice mixture and place on baking sheet.
  7. Bake at *375 for 11-12 minutes until lightly browned and baked through.

So Big

When did my baby get so big?  I can't believe he is 14 months old. He is such a little person right now with a big personality. He is walking, babbling, seeing how far he can push my buttons. What an awesome little dude he is. It is funny how this time last year I was trying to figure out how to survive and sleep, and now I am chasing around a little boy. It is funny how time fast forwards.

He is currently getting his 5th tooth, and he is finally starting to pick things up with his hands and feed himself. Its funny the things you find exciting. Oh how being a parent has changed my way of thinking.

1st Family Mini Vacation

Last weekend we traveled to the Lewes/Rehoboth Beach DE area for a long weekend mini vacation. I found a 2 bedroom condo about a 5-10 minute walk from the Lewes Bay. It was nice because we could go hang out at the beach for a little while, and then come back for nap time. It was super nice because we each had our own rooms, and didn't have to share sleep space. Last time we shared a sleep space when he was around 8 months old, it was miserable. It took me a week to get him to sleep through the night again!

Zane slept great at night in his pack 'n' play, and napped pretty well too. In the mornings, we walked in town to the coffee shop, and then went back to the condo for breakfast. After nap time, we headed to the beach for a few hours, and then back back for lunch and nap time #2. 

Zane was not a huge fan of the sand. At all! He cried the 1st time we stuck him in it. Day #2, he crawled out onto the sand, but he was still a little unsure of it. At least he didn't try to eat it!

When Zane and Jack napped, i headed the pool for some reading and tanning time! We walked into town again at night, and gave Zane his 1st taste of ice cream. He wasn't sure at first, but liked it after a few bites!

On Monday night, we headed into Rehoboth Beach, and walked around the boardwalk. Funland was closed, but it was still nice, and not over crowded with people. We ate on the boardwalk at Grottos, which is a tradition for me because I used to do that when I was younger. My picky eating child ate some pizza too!

It was a nice little vacation, and glad we were able to do it. We had beautiful weather, and it was nice to be able to do a little getaway with our little family because it is so hard to coordinate stuff with our work schedules.

I suspect next summer when Zane is almost 2 will be even more fun at the beach!
